Spicy Pork Asian Lettuce Cups

Games and Sports, those are other reasons for bringing people together in celebration! If it is your turn to host, our lettuce cups are a great option for serving something healthy, but really tasty and different! They are easy to make and simple to eat, which is basically what you need on such occasions.


For the filling:

450gr pork

1 tsp minced garlic

1 tsp grated ginger

2 stalks scallions

3 tbsp roasted peanuts

1 tbsp cooking oil

For the sauce:

1 1/2 tbsp hoisin sauce

1 tsp soy sauce

1/2 tsp sesame oil

1 tsp rice wine vinegar

1 teaspoon Sriracha hot sauce

For the wraps:

12 lettuce leaves

Serves: 6


Roughly chop the peanuts and place in a small pan. Cook the peanuts until lightly browned. Set aside.

Mix the sauce ingredients in a small bowl and set aside.

For the filling: heat a pan, drizzle with cooking oil. Add garlic, ginger and scallions; stir a few seconds. Add the pork and stir until cooked through. Add the sauce, toss everything and let simmer until it has thickened.

For serving, scoop the filling into the lettuce leaves and sprinkle with peanuts and you are set! Go team!

Greek Salad

Greek salad

Fresh, summery and perfect for weeknight light dinner. There is a debate whether this salad is served with lettuce or not, we have seen it both ways and taste just as good. We see no possibility of harming the outcome by adding more veggies to your meal!


4 medium ripe tomatoes

1/2 medium red onion

1 cucumber

1 green bell pepper

1/2 cup kalamata olives (or black olives)

1 tbsp red wine vinegar

3 tbsp extra virgin olive oil

2 tsp dried oregano

100gr (4oz) Greek feta cheese

salt and pepper to taste


Serves: 4


Cut tomato into wedges. Thinly slice the onion. Peel the cucumber and dice. Remove the seeds of the bell pepper and slice into rings. Cut the olives by half. Transfer all into a medium bowl with lettuce.

In a small bowl whisk the olive oil, vinegar, ground pepper and salt. Pour over the salad and toss everything with your clean hands or tongs. Top with block of feta (or crumble and scatter if you prefer). Sprinkle the oregano and serve.

Chicken Sandwich

Chicken Sandwich

We like today’s recipe as it incorporates four of our hydroponic veggies: celery, scallionbell pepper and lettuce. We also like it because it is very fulfilling and practical for making a quick lunch or dinner.


1 1/2 cups chopped cooked chicken

1/2 cup chopped celery

1/2 cup bell pepper

2 scallions

1/2 cup natural yogurt

1/8 tsp salt

1/8 tsp pepper

4 whole wheat sandwich buns, split

4 lettuce leaves

4 slices of mild cheese

Serves: 4


In a medium bowl combine the first seven ingredients. Warm the sandwich buns. Place a slice of mild cheese, like Provolone, and a lettuce leaf on each of the buns. Fill with the chicken salad and you’re done!
